Scope and Contents
A German cookbook with recipes from approximately the late nineteenth or early twentieth century. The volume is written in a German cursive hand in a ruled ledger book with stamped, numbered pages. This book was possibly written by the mother of Ilse Stern (see Ms. Coll. 1055, University of Pennsylvania). The recipes are divided by type into sections with headings in the top margin followed by titled recipes. The small sections include recipes for soup, fish, meat dishes, sauces, spreads, potatoes, egg dishes, drinks, small Kosher items, preserves, and desserts. A majority of the volume is devoted to confections including pastries, cookies, cakes, puddings, and tortes. The pastries and confection section is divided by hot and cold. The section of Kosher items contains recipes for chocolate desserts and praline. The fish dishes are for trout, pike, carp, and herring with a recipe for gefilte fish. There are recipes for matzo balls and dumplings. A section on potatoes contains a variety of recipes. The drink recipes include eggnog with cognac and Russian punch. The end of the volume contains an index followed by a few additional recipes including noodle dishes and kugel. There are two leaves laid in the volume.
